I reached out to her recently to ask for a new recipe for Happy Magazine and her team came back quickly with this absolute cracker for Banana Breakfast Muffins from her new cookbook, No Fuss Vegan.
I’m VERY partial to a great breakfast muffin and these look like they’ll definitely deliver on flavour. I’m dying to try them out but there’s one big problem… I’ve got to wait for my bananas to ripen 🤣
