My favourite quick and HEALTHY snack

My favourite quick and healthy snack is really simple. Two big spoons of Vanilla Coconut Yogurt from the Coconut Collaborative topped with a tablespoon of Linwoods Milled Organic Flaxseed, a tablespoon of Lizi’s Low Sugar Granola, a big handful of blueberries and a generous sprinkle of ground cinnamon. Mmm it’s SO, SO GOOD!

The Coconut Collaborative Yogurt is made with mostly coconut milk and coconut water. It’s high in healthy fats, naturally low in sugars and made with live cultures to make your tummy happy. It’s thick and creamy and the vanilla flavouring is really pleasing.

The Linwoods Milled Organic Flaxseed is a natural source of Omega 3, a source of iron, zinc and magnesium and has no added sugar. The flaxseed is cold milled to protect all the nutritional goodness and Omega oils contained in the seed.

Less than 4% sugar, Lizi’s Low Sugar Granola adds a nice bit of crunch and a little ‘treat’ factor for those of us on a low sugar diet! It’s a mix of jumbo rolled oats, pumpkin seeds, sunflower seeds, cashew nut pieces, almond pieces, hazelnut pieces, walnut pieces and dessicated coconut, slightly sweetened with fructose (1.6%) and black treacle (1.6%).

The blueberries are low in calories but high in nutrients. They (and other berries such as raspberries and blackberries) are an excellent source of vitamin C, which helps protect cells against damage and aids in the absorption of iron. They also contain a decent amount of soluble fibre, which slows down the rate at which sugar is released into the bloodstream and helps to keep the digestive system happy. Find out more here.

I love this for a mid-morning or mid-afternoon snack at home or quickly spooned into a tupperware if I’m on the go. My next plan is to make this Easy Berry Chia Seed Jam from Sadia at Pick Up Limes and add it too!
