Must-try 15-minute dinner meals

Sadia’s latest video on the Pick Up Limes channel is a cracker. She shares three easy dinner ideas all based on the ‘plate method’ of 25% whole grains, 25% protein (plant-based) and 50% veggies/fruit. And boy, do they all look delicious.

If you’ve been wondering how to lower the meat content in your weekly diet, there are three great meal ideas in this video using plant proteins – tofu, tempeh and peas and pine nuts. If you’re anything like me and have no idea where to begin when it comes to buying – let alone cooking – tofu or tempeh, this video will be an eye-opener as to the mouth-watering possibilities these ingredients can have.

I was grocery shopping in the super-size Tesco in Liffey Valley this week and noticed they had a good selection of both tofu and tempeh in their fridges, so these ingredients are becoming easier to find than ever before. I’ll definitely be giving all three of these recipes a go in the next few weeks.
