Mmm… Butternut squash soup – is there really anything better for lunch on a cold and rainy day?
I love this latest recipe video from Lisa at Downshiftology. This soup is super simple to make – you don’t even have to peel or chop up the butternut.
If you don’t have a Vitamix blender (I don’t), just use a big pot and a hand-held blender when you’re ready to get blending. The 425 fahrenheit heat on the oven is 200 degrees celcius (fan oven) for us.
