Tuna Avocado Macaroni Salad

Isn’t the weather just glorious? I find it so much easier to get up in the morning when you see the sunshine streaming in from the early hours. We’re not accustomed to this heat though, are we? I know all I want to eat when it’s so hot outside are beautifully fresh and tasty homemade salads.

When this Tuna Avocado Macaroni Salad popped in my inbox from The Recipe Critic, I knew I’d be making it straight away.

Yesterday morning my little boy and I walked ourselves down to our local SuperValu and we picked up the ingredients we needed for this salad. By the time we got home we’d worked up quite a hunger so I quickly threw the salad together. I’d already made the macaroni before our walk so that was most of the work done.

I used my food processor to do all the chopping and grating work (except for the avocado) and a tablespoon of mayonnaise as dressing.

It didn’t look quite as perfect as this one, but it tasted great and I loved every bit of it. Best of all, there’s another big serving of it in a tupperware in the fridge for tomorrow.
